Our creamery makes a farmstead cheese and as such, is seasonal in nature.  Availability and  flavor depends upon the time of year, the "stage of the milk production" and the natural grasses, herbs and other pasture flora that may be in season.  We strive to produce a consistent, quality product but with the essential elements of "terroir" directing its final outcome. 

All of our cheese is made by hand from the fresh milk of our own herd of Nigerian Dwarf Dairy Goats.

You can find our cheeses at our Farm Store located on our farm at 1495 Coburn Rd., Plainfield, Vermont or:

At the following Vermont winter farmers markets:
St. Johnsbury, 1st and 3rd Saturdays  10-1 in the old railroad station/Welcome Center
and at the Montpelier Farmers Market, 2nd and 4th Saturdays 9-1 at Vermont College

OUR AWARD WINNING CHEVRE

Our chevre is a fresh cheese made from pasteurized milk.   This is a very mild, soft, spreadable cheese which is great on crackers, sandwiches and used in preparing pasta dishes, omelettes and salads.  

In addition to Plain Chevre, we offer several seasonal flavors including savory and sweet varieties.  Savory flavors include onion/garlic/chive, dill and cracked pepper, basil pesto, herbs de provence and other seasonal varieties.  

Our "Breakfast Chevre"are sweetly flavored chevre and are delicious on a morning muffin or bagel. 

Our chevre is made using only vegetarian rennet and is  labelled with all  ingredients.   Flavors vary seasonally.

Chevre is packaged as approximately 4ozs of cheese.

We can make a party log in any available flavor you wish.  Party logs come in 2 sizes, 8 oz for a smal and 1 lb for the really big party.  Chevre is formed in a log and ready to plate for your own presentation.

OUR AWARD WINNING FETA

Our feta is made using traditional methods with a salt brine.  This is a customer favorite and is sold as a plain block of feta packaged in traditional salt brine, or marinated in olive and cannola oil, peppercorns and fresh rosemary.

AGED RAW MILK CHEESES


We age our raw milk cheeses for a minimum of 60 days.  Our methods are traditional ones, in the style of the mountain regions of Europe.  We age them in a small aging "cellar" just off our cheese make room and they are cared for each day, turned, washed and rubbed as dictated by the the variety.  
Some varieties are washed with a salt brine, others with beer from Trout River Brewery, a Vermont micro-brewery.  Other varieties are rubbed with olive oil and spices and another just brushed and left to mature in its own way.
Each raw milk aged cheese is named after a Vermont river.

All of our Aged Raw Milk Cheese are available in different sizes:  A "Full Moon", which is an entire wheel, a "Half Moon",  and a "Quarter Moon".  Approximate weights for each are listed with the variety available.

It is also sold in our Farm Store in smaller pieces, individually weighed and priced.

OUR AWARD WINNING

WINOOSKI TOMME

This is an alpine style, aged, raw milk cheese that we make year round from our own fresh goats milk.  Made entirely by hand, the curds are cut, drained and then pressed in molds and brine salted.   Throughout  the 3 - 7 month aging period, it is brushed and washed with a salt brine.    The paste of this cheese is semi-firm and mild and Winooski is wonderful on its own or with a nice French bread,  accompanied by a semi-dry  white wine, such as a chardonnay or chenin blanc  or a light bodied fruity wine.  It's also great as an addition to your favorite recipes. 

A Full Moon weighs approximately  5 lbs.  $30 per lb.
