Willow Moon Farm Sausage & Potato Soup

When the days get chilly, there’s nothing quite like a hearty bowl of homemade soup to warm you from the inside out. Around here at Willow Moon Farm, we lean on simple, nourishing recipes that make the most of what we raise and grow — and this creamy sausage, potato, and kale soup has quickly become a family favorite.

The best part? You can make it either in the crockpot or right on the stovetop, depending on how much time you’ve got. Either way, it’s easy, comforting, and packed with flavor thanks to our pasture-raised Rosemary Garlic or Chorizo sausage.

Ingredients

6–8 potatoes, chopped

1 onion, chopped

1 lb Willow Moon Farm sausage (Rosemary Garlic or Chorizo)

32 oz chicken broth (can also use homemade pork bone broth with our pork bones)

1 cup heavy whipping cream

6 oz kale

Salt, pepper, garlic powder, onion powder (to taste)

Directions

Crockpot Method

1. Cook sausage, onion, and garlic in a pan until sausage is browned.

2. Add sausage mixture to crockpot with chicken broth and potatoes.

3. Cook on low for 5–6 hours.

4. About 30 minutes to 1 hour before serving, stir in kale.

5. Whisk together heavy cream, then stir into soup.

6. Season to taste!

Stovetop Method

1. In a large soup pot, cook sausage, onion, and garlic until sausage is browned.

2. Add potatoes and chicken broth. Simmer on medium heat for about 20–25 minutes, until potatoes are tender.

3. Stir in kale, then add cream.

4. Cook another 5–10 minutes until flavors come together.

5. Season to taste and serve warm.
